Where French technique meets Japanese soul — a poetic dialogue on every plate.

Chef Shinobu Namae — a protégé of Michel Bras and Heston Blumenthal — returned to Tokyo to create something unprecedented: French gastronomy filtered through the seasons and sensibilities of Japan. At L'Effervescence, named for the "bubbling up" of creative energy, each tasting menu reads like a haiku in three acts.

The iconic "Turnip" dish — a single vegetable slow-cooked for four hours — has become legend. The wine list spans 1,500 labels with extraordinary depth in Burgundy and Champagne.
